最近作ったおかずです。今おいしいブロッコリの、前回ご紹介した自家製和風オニオンドレッシング和え。お好みでディジョンマスタードを入れても。手で裂いた断面が綺麗です。Here are some of the dishes I made recently. This is a simple one, broccoli with wafu onion dressing (the recipe I introduced in my last post). You can add some French mustard to this as well if you feel like it.

冷蔵庫に冷やご飯があったので、残り物の野菜等と焼き飯を作る事にしました。あっ!香菜=コリアンダーも発見!! これはヴェトナム風焼き飯を作るチャンス。去年現地で買って帰った、これさえあればヴェトナムの味になる魔法の調味料ニュクマム(魚醤)と白コショーでぱらりと仕上げました。いつ食べてもおいしい味です。I found some left-over rice and some coriander in fridge. It’s a good opportunity to make Vietnamese fried rice (Hurrah for ad-lib cooking!). Let’s use the magical nước mắm fish sauce which will impart a Vietnamese flavor to everything, and the white pepper I bought last year in Vietnam. Make sure to cook it until it is crispy. 疲れて帰った日は、鍋物が準備が簡単で嬉しいのです。久しぶりにキムチ鍋を。1度にたくさん作って冷凍庫に保存してある鶏ガラスープをベースに鶴橋のオモニ特製というキムチを入れて。こうして見ると本当に鮮やかな赤色ですね。When you come back from work and are very tired, a nabe or nabemono dish (hotpot dish) is so easy to prepare and tastes great! I cooked this nabe below with home-made chicken broth (stored in my freezer for this kind of eventuality) and kimchee made by Korean mama from Osaka’s Tsuruhashi (the biggest Korean Town in West Japan). What a vivid red colour it is!! (not Photoshop!).

定番の、小粒の帆立とグリーンアスパラとバターソティ。色合いも綺麗ですが、味のコンビネーションも良好です。This is a regular favourite of ours, baby scallops sautéed in butter and served with green asparagus. The combination of the colour and the flavour are both so good.

冷蔵庫に常備の納豆。今では私より連れ合いの方が良く食べてるかも…. We always have natto in our fridge. These days my partner is bigger fan of Nattou than I am.

これから夏にかけて活躍する冷や奴。連れ合いが白川沿いの山崎豆腐店さんで買って来ました。濃い味がして美味です。From now on as we move into summer, this dish is going to become increasingly popular here in Japan. It is hiyayakko, cold tofu. My partner bought it at a tofu shop near the Shirakawa river in the Higashiyama district of town called Yamazaki Tofu-ten. It’s dense and creamy. Yum.

白インゲン豆とまたまた残り物の野菜をオリーブオイルとレモン汁、塩とこしょうであっさりと味つけます。これもこれから暑くなってきたら嬉しい一品です。(漢字では『隠元豆』)This is a salad made of white kidney beans and leftover veggies with olive oil, lemon juice, and salt and pepper. It will be another popular dish come the hot weather.

台湾土産にもらったからすみ=ボッタルガとブロッコリを荒みじん切りして、にんにくでペペロンチーノスパゲッティにしました。これも相性抜群、ぺろりと完食です!I got this bottarga dried mullet roe from my parents when they travelled to Taipei (it’s renowned as a souvenir from Taiwan, probably because it is otherwise hugely expensive here in Japan!). I made this spaghetti with finely chopped broccoli, in the peperoncino style.
