何だかまさか!ないきなりの酷暑の日々ですが、皆様お元気ですか?まだ6月というのに、何だか夏バテ気味の今日この頃、食欲もちょっと減退気味。こんな時は、1品で食べ易くて野菜の栄養も取れるメニュにしましょう。俗に言うぶっかけ素麺豪華版です。

Hasn’t the weather gone REALLY hot all of a sudden??! How are you all? I already feel a summer lethargy lately, and I am losing my appetite in the heat and humidity here in Kyoto. So… let’s make a single dish which is easy to eat, and full of veggies and nutrition: bukkake soumen wheat noodles, ‘luxury version’.

以下番号順に説明。If you mention soumen to most Japanese people, they think of ‘quick and easy’ food for hot summer days. Indeed it often is just that, but I took my time making this slightly fancy version. Perhaps you’d like to give it a try yourself?  Here’s an explanation of the different toppings.

① 行きつけの友人経営の美容室の向かいの路地で売ってる、有機野菜屋さんで求めたなすの素揚げ。Aubergines (eggplants if you prefer), organic, from the lady who lives across the street from my hairdresser’s. I prepared them suage-style, that is, deep fried without a batter coating.

② 擦りおろした生姜。Freshly-grated ginger.

③ 山科のスーパーで買ったほうれん草。近所よりかなり安いんです。Spinach from the supermarket up the hill in Yamashina (where veggie prices are a lot lower than in the city).

④ 自家製の出汁ブレンドとめんつゆミックス。My own dashi mixed with a tsuyu dipping sauce.

⑤ 鳥取産の素麺。Somen noodles, these from Tottori Prefecture.

⑥ 温泉卵。Hot-spring Egg (Onsen Tamago)

おっと、忘れてました。薄切りにした椎茸をさっと甘辛く似たのもトッピングします。以上、うだる暑さの中の食欲の無い日でも結構ぺろりとイケる一品の紹介でした!In this photo above you can also see the shiitake mushrooms that I prepared by simmering in shoyu soy sauce, mirin and sake. This is the perfect menu for a hot day. Even when you don’t have a good appetite, I can guarantee you can finish it off pretty quickly!
