皆さん、鶏飯(けいはん)って聞いた事あります?京都ではあんまり馴染みがないかもですが、私がこの激ウマスープ飯を初めて食べたのは、かつて岡崎にあった元祖無国籍料理屋さんでした。奄美大島発祥で、朝食で食べられる事が多かったとか。字のまま鶏飯を訳すとチキンライスとでもなるのでしょうが、この料理はお茶漬けならぬスープ漬け御飯ですね。これも暑い夏にさらさらイケます。 スープのベースは鶏ガラで、私はトッピングに使う鶏胸肉を茹でた汁を使います。これが、内地で食す御飯ものと一線を画す、珍しいおいしい味のアクセントなんでしょうね。Keihan is a rice dish that you don’t see served so often here in Kyoto. It originated in Japan’s tropical Southern islands, on Amami Oshima, where I hear it is commonly served at breakfast. The kanji characters for its name mean ‘chicken rice’, and it is the torigara chicken broth that gives it a distinctly Southern accent that you don’t usually associate with rice dishes on the Japanese mainland.

The first time I ate keihan was, in fact, at a mukokuseki ryouri international cuisine restaurant many years ago in Okazaki, the part of Kyoto where I now live. Alas the restaurant is long gone.

じゃ、簡単にレシピを紹介します。まず、鶏胸肉を茹でて、茹で上がったら茹で汁に浸したまま常温に冷まします。茹で汁はスープ用に取って置き、胸肉は手で食べやすく裂きます。後は、錦糸卵を作ります。人参は粗い千切りにして先ほどの茹で汁をひたひたに入れ、耐熱ガラスの器に入れ、ラップをして3分ほど加熱します。椎茸は細切りにし、甘辛く煮ておきます。何だか鶏肉以外は散らし寿司のトッピングと似ていますね。Here’s the recipe: First, simmer a chicken breast until it is completely cooked, and leave it aside to cool until it reaches room temperature. Reserve the water you cooked it in (don’t forget and throw this stock out!). Tear it into strips by hand. While it cools prepare the kinshitamago – thinly sliced strips of egg omelette, and also slice the carrot into similar-sized pieces (see photos below). Here’s a trick: soak the carrots in a few spoonfuls of the chicken stock, then wrap them with a little of the juice in Saranwrap (clingfilm), and microwave them for 3 minutes. While this is going on, slice shiitake mushrooms and simmer them for a while with shoyu and mirin.

仕上げに三つ葉と香ばしい白胡麻をたっぷり目にトッピングしたら….醤油少々で味付けした熱々の茹で汁をかけて召し上がれ!!Place all the ingredients carefully in a deep dish or bowl so that the contrasting colours and textures stand out. Finally top everything with roughly chopped mitsuba trefoil and ground white sesame, and pour on the hot chicken stock (I like to add a spoonful of shoyu soy sauce).

私も召し上がっています!味はこの顔から想像してね。I think you can imagine how it tasted!
